During brewing, fermentation and lagering, you log measurements such as temperature, original gravity and final attenuation, and assign the batch to a fermentation or lagering tank. This gives you a clear view of which tank is occupied, when each batch will be ready, and how the progress of a fermentation compares with earlier brews of the same recipe.

Casks and kegs are expensive and circulate between the brewery and the customer.
